Spring Recipe – Dandelion Salad

Spring is the best time to incorporate light cleansing food into your diet. Luckily, it’s also the season when these foods become available! Below is my favourite cleansing salad to eat during Spring to relieve my body of the heavier and often fattier foods eaten in the Winter time.

Dandelion is a wonderful cleansing herb and is packed with vitamins and minerals. You can use the entire plant for medicine purposes. The root can be make into a decoction, tincture or food to help support your liver in detoxification. The leaves can be eaten raw or made into an infusion or tincture to support digestion and provide nutrients. The flowers are edible and can be a beautiful addition to your meals. Finally, blowing the seeds provide a sense of nostalgia from childhood 🙂

Try incorporating some wild dandelion greens into the following recipe. They sure are easy to find and no one will mind you picking their dandelions!

 

Dandelion Salad

Ingredients:

1 bunch dandelion greens, washed and trimmed leaves

1 grapefruit, peeled diced

½ cup red onion, diced

½ cup spinach, diced

2 tbsp. apple cider vinegar

2 tbsp. olive oil

½ tsp. pink salt

½ tsp. black pepper

1 handful of dandelion flower heads, washed (optional)

Directions:

1. Combine dandelion greens, grapefruit, onion and spinach into a bowel

2. Mix apple cider vinegar, olive oil, salt and pepper into a dressing

3. Toss the dressing into the salad and enjoy! 🙂

(Option to use dandelion flower heads to add some sunshine to your dish!)
